Carrot/ Gajar halwa recipe : Quick , easy and delicious



Winters always scream for hot and steamy carrot halwa, and I am sure if you are an Indian you must love it too like I do. In today’s blog post I am sharing the secret of making the yummiest gajar ka halwa from my mum’s kitchen.

Serving: - For 3 to 4 people

INGREDIENTS-  

  •       Carrots(Red/Orange)-  1Kg
  •          Milk- 1 glass(350 ml)
  •          Ghee- 1+1/2 big tbsp.
  •          Condensed milk- 150 ml
  •        Sugar- 3 to 4 big tbsp.
  •         Dry fruits-25 grams each (Almonds, Cashew nuts, pistachios, raising etc.)
  •          Cardamom powder/ Cardamom- (3 to 4 pods) 

PROCEDURE- 

Step 1) Cleaning the carrots 

·         Clean the carrots by chopping of the head and tail of the carrot. Scrape off the upper layer of the carrots using a knife.
·         Wash it thoroughly, which will remove any dirt and grime from the carrots and also will remove the pesticides. 

Step 2) Grating the carrots

·         Use medium side of the grater to grate the carrots as carrots have lots of moisture in them we do not want to make them pulpy, for carrot halwa we need medium scrapes only. 

Step 3) Cooking 

  • Heat the pan(Non-stick preferred) and add the ghee to it, let the ghee melt completely and then add the grated carrots slowly.
  • Sauté the carrot for 20-25 minutes, without covering the lid at medium flame. If you do so carrot can start sticking to the pan which is not good at all. It is advisable to use ghee only, as it makes the halwa delicious.
  •  Keep checking the carrot in between and stir it after every 5-6 minutes.
  •   After 25 minutes you will notice the amount of carrot that we added to the pan initially has now been reduced to half, then add the milk and cook for 10 minutes, string the halwa in between.
  •  After 10 minutes add condensed milk and sugar, and again cook for 10 minutes. If you are not using condensed milk use 6 big tbsp. of sugar.
  •   Add cardamom powder(1/2 tbsp.) or crush the seeds of cardamom pods and add to the carrot halwa, add the dry fruits of your choice and cook it again for 10 minutes.
  •  Carrot halwa is now ready. For serving take it in a bowl and garnish it with dry fruits of your choice.
  •   Serve hot.
